A refreshing salad combining orzo pasta, cucumber, tomatoes, and a zesty lemon dressing, perfect for summer meals.
Ingredients
- 1 cup orzo pasta
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/4 red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup feta cheese, crumbled
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Cook the orzo pasta according to package instructions. Drain and let it cool.
- In a large bowl, combine the diced cucumber, cherry tomatoes, red onion, parsley, and feta cheese.
- In a separate small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
- Add the cooled orzo to the vegetable mixture and pour the dressing over it.
- Toss everything together until well combined.
- Serve chilled or at room temperature.
Notes
For the best flavor, chill the salad for at least 30 minutes before serving.
