Ingredients
- 8 oz pasta (e.g., penne or spaghetti)
- 2 cups fresh spinach
- 1/2 cup sun dried tomatoes (chopped)
- 2 cloves garlic (minced)
- 1/4 cup olive oil
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Red pepper flakes (optional, for heat)
- Fresh basil (for garnish)
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the sun dried tomatoes and spinach to the skillet, cooking until the spinach is wilted.
- Toss the cooked pasta into the skillet with the spinach and sun dried tomatoes.
- Add the grated Parmesan cheese, salt, pepper, and red pepper flakes if using. Mix well to combine.
- Serve warm, garnished with fresh basil.
