Ingredients

  • 8 oz pasta (e.g., penne or spaghetti)
  • 2 cups fresh spinach
  • 1/2 cup sun dried tomatoes (chopped)
  • 2 cloves garlic (minced)
  • 1/4 cup olive oil
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Red pepper flakes (optional, for heat)
  • Fresh basil (for garnish)


Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the sun dried tomatoes and spinach to the skillet, cooking until the spinach is wilted.
  4. Toss the cooked pasta into the skillet with the spinach and sun dried tomatoes.
