Description

Light and refreshing Vietnamese Summer Rolls filled with chicken, fresh vegetables, and herbs, perfect for a healthy meal.


Ingredients

  • Rice paper wrappers
  • Cooked chicken breast, shredded
  • Lettuce leaves
  • Rice vermicelli noodles, cooked
  • Fresh herbs (like mint and cilantro)
  • Sliced cucumber
  • Sliced bell peppers
  • Peanut sauce or hoisin sauce for dipping


Instructions

  1. Prepare all the ingredients by slicing the vegetables and cooking the rice vermicelli noodles.
  2. Fill a shallow dish with warm water and dip a rice paper wrapper for about 10-15 seconds or until soft.
  3. Lay the wrapper flat on a clean surface.
  4. Add a lettuce leaf, a small amount of chicken, noodles, herbs, and sliced vegetables to the center of the wrapper.
  5. Fold the sides over and roll tightly from the bottom to the top.
  6. Repeat with remaining ingredients.
  7. Serve with peanut sauce or hoisin sauce for dipping.

Notes

For best results, use fresh ingredients and avoid overfilling the rolls. Practice wrapping for perfect rolls.
