Ingredients
- 2 cups cooked chicken, shredded
- 1 cup carrots, julienned
- 1 cup bell peppers, sliced
- 1 cup cucumber, sliced
- 1/2 cup red cabbage, shredded
- 1/2 cup cilantro, chopped
- 4 large tortillas or wraps
- 1/2 cup peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 tablespoon lime juice
- 1 teaspoon garlic, minced
- 1 teaspoon ginger, grated
- Salt and pepper to taste
Instructions
- In a bowl, whisk together peanut butter, soy sauce, honey, lime juice, garlic, and ginger until smooth to make the peanut sauce.
- Lay the tortillas flat, and spread a generous amount of peanut sauce over each.
- Layer the shredded chicken, veggies, and cilantro on top of the sauce.
- Roll the wraps tightly, tucking in the sides as you go.
- Slice the wraps in half and serve with extra peanut sauce for dipping.
Notes
Use leftover chicken for a time-saver and incorporate fresh veggies for the best texture. Feel free to customize the recipe with different wraps.
