A quick and healthy meal that’s packed with flavorful ingredients, perfect for lunch or dinner.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup carrots, julienned
  • 1 cup bell peppers, sliced
  • 1 cup cucumber, sliced
  • 1/2 cup red cabbage, shredded
  • 1/2 cup cilantro, chopped
  • 4 large tortillas or wraps
  • 1/2 cup peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon lime juice
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste


Instructions

  1. In a bowl, whisk together peanut butter, soy sauce, honey, lime juice, garlic, and ginger until smooth to make the peanut sauce.
  2. Lay the tortillas flat, and spread a generous amount of peanut sauce over each.
  3. Layer the shredded chicken, veggies, and cilantro on top of the sauce.
  4. Roll the wraps tightly, tucking in the sides as you go.
  5. Slice the wraps in half and serve with extra peanut sauce for dipping.

Notes

Use leftover chicken for a time-saver and incorporate fresh veggies for the best texture. Feel free to customize the recipe with different wraps.
