Description

A vibrant, no-cook Mexican-inspired salad blending tangy street corn with crisp cucumber, cotija, and zesty cilantro. A fresh counterpoint to BBQ dishes.


Ingredients

Cottage Cheese, full-fat – 1/2 cup
Mini Cucumbers – 5, thinly sliced
Corn Kernels, canned (drained) – 1 1/4 cups
Tajín Clásico Seasoning – 1 teaspoon, plus more to taste
Fresh Cilantro – 1/3 cup chopped, plus extra for garnish
Cotija Cheese – 2 tablespoons crumbled, plus extra for topping
Pickled Red Onions – 1/4 cup
Kosher Salt – to taste


Instructions

In a food processor, blend the cottage cheese and 1/3 cup chopped cilantro until smooth
In a large bowl, combine the sliced mini cucumbers, corn kernels, and pickled red onions
Pour the blended cottage cheese dressing over the vegetable mixture
Gently toss to coat evenly
Sprinkle crumbled cotija cheese and Tajín seasoning on top
Adjust seasoning with kosher salt to taste
Garnish with additional cilantro if desired

Notes

Substitute cottage cheese with a mayonnaise-sour cream blend
Use English cucumbers in place of mini cucumbers
Frozen/canned corn is acceptable
Feta cheese makes a halal-friendly cotija substitute
Raw red onions can replace pickled onions in a pinch
