Ingredients
- 4 chicken breasts
- 1 cup chicken broth
- 2 lemons (juiced and zested)
- 2 tablespoons olive oil
- 2 teaspoons dried thyme
- 2 teaspoons dried rosemary
- 2 cloves garlic (minced)
- Salt and pepper to taste
- 2 cups rice
- 4 cups water or additional chicken broth
Instructions
- In a slow cooker, combine olive oil, lemon juice, lemon zest, garlic, thyme, rosemary, salt, and pepper.
- Add the chicken breasts and coat them well with the marinade.
- Pour the chicken broth over the chicken.
- Cook on low for 240-360 minutes or on high for 120-180 minutes, until the chicken is cooked through.
- About 30 minutes before serving, cook the rice according to package instructions using water or additional broth.
- Serve the chicken over the fluffy rice and spoon the cooking juices over the top.
Notes
For added flavor, consider using fresh herbs instead of dried. Searing the chicken beforehand can enhance the taste.
