Ingredients
- 4 boneless, skinless chicken breasts
- 2 cups carrots, sliced
- 2 cups potatoes, diced
- 1 cup parsnips, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 tablespoon olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, cooking until softened.
- Transfer the onion and garlic to the slow cooker.
- Layer the chicken breasts over the onion and garlic.
- Add the sliced carrots, diced potatoes, and diced parsnips on top of the chicken.
- Pour in the chicken broth and season with dried thyme, dried rosemary, salt, and pepper.
- Cover the slow cooker and cook on low for 6-8 hours or until the chicken and vegetables are tender.
- Before serving, garnish with fresh parsley.
