  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/2 cup low-sodium chicken broth
  • 2 tablespoons Dijon mustard
  • 1/2 cup heavy cream
  • 1 tablespoon fresh thyme or tarragon, chopped (or 1 teaspoon dried thyme)
  • 1 tablespoon butter
  • Chopped parsley, for garnish (optional)
  • Lemon wedges, for serving (optional)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the pork tenderloin dry with paper towels and season with salt and pepper.
  3. Heat olive oil in a large, oven-safe skillet over medium-high heat and sear the pork for 2-3 minutes per side until golden brown.
  4. Transfer the skillet to the oven and roast the pork for 12-15 minutes, or until the internal temperature reaches 145°F (63°C).
  5. Remove the pork and let it rest for at least 5 minutes before slicing.
  6. In the same skillet, sauté minced garlic for 30 seconds, then add chicken broth and scrape up browned bits.
  7. Stir in Dijon mustard and heavy cream, simmering for 3-4 minutes until thickened.
  8. Add butter and fresh herbs, season to taste, and pour the sauce over sliced pork.
  9. Garnish with parsley and serve with lemon wedges, if desired.
