Description

Ingredients

  • 1 lb Chicken Breast (or thighs)
  • 2 tbsp Olive or Sesame Oil
  • 2 cloves Garlic (minced)
  • 1/2 cup Soy Sauce (low sodium)
  • 1/3 cup Pineapple Juice
  • 2 tbsp Honey or Brown Sugar
  • 1 tbsp Rice Vinegar or Apple Cider Vinegar
  • 1 tsp Cornstarch (mixed with 1 tbsp water)
  • 1 tbsp Water
  • 1.5 cups Cooked Rice
  • 1 cup Pineapple Chunks
  • 1/2 whole Red Bell Pepper (diced)
  • 1/4 cup Green Onions (chopped)
  • Sesame seeds (for serving)
  • Crushed red pepper (optional)


Instructions

  1. Heat the oil in a skillet over medium-high heat. Sauté garlic until fragrant, about 30 seconds.
  2. Add chicken pieces and cook until browned and fully cooked, about 5-7 minutes.
  3. In a bowl, whisk together soy sauce, pineapple juice, honey, rice vinegar, cornstarch mixed with water, and crushed red pepper.
  4. Pour the sauce over the chicken in the skillet and simmer for 3-5 minutes until thickened.
  5. Stir in cooked rice, pineapple chunks, and red bell pepper, mixing gently.
  6. Cook for an additional 2-3 minutes, heat through, and stir in green onions.
  7. Serve hot, garnished with sesame seeds.
