A delicious and effortless dish that combines savory chicken with the tropical sweetness of pineapple, perfect for weeknight dinners.
Ingredients
- 1 lb Chicken Breast (or thighs)
- 2 tbsp Olive or Sesame Oil
- 2 cloves Garlic (minced)
- 1/2 cup Soy Sauce
- 1/3 cup Pineapple Juice
- 2 tbsp Honey or Brown Sugar
- 1 tbsp Rice Vinegar or Apple Cider Vinegar
- 1 tsp Cornstarch
- 1 tbsp Water
- 1.5 cups Cooked Rice
- 1 cup Pineapple Chunks
- 1/2 whole Red Bell Pepper (diced)
- 1/4 cup Green Onions (chopped)
- Sesame seeds (for serving)
- Crushed red pepper (optional)
Instructions
- Cut the chicken breast into bite-sized pieces.
- Heat the oil in a large skillet over medium heat and sauté the minced garlic for about 30 seconds.
- Add the chicken pieces and cook for 5-7 minutes until fully cooked and lightly browned.
- Whisk together the soy sauce, pineapple juice, honey or brown sugar, rice vinegar, cornstarch mixed with water, and crushed red pepper in a bowl.
- Pour the sauce over the chicken and simmer for about 2-3 minutes until thickened.
- Add the pineapple chunks and diced red bell pepper and cook for an additional 2-3 minutes until slightly tender.
- Serve the mixture over cooked rice, topped with green onions and sesame seeds.
Notes
Adjust sweetness and spice levels to your liking. Great for using leftover rice.
