Description

A delicious and effortless dish that combines savory chicken with the tropical sweetness of pineapple, perfect for weeknight dinners.


Ingredients

  • 1 lb Chicken Breast (or thighs)
  • 2 tbsp Olive or Sesame Oil
  • 2 cloves Garlic (minced)
  • 1/2 cup Soy Sauce
  • 1/3 cup Pineapple Juice
  • 2 tbsp Honey or Brown Sugar
  • 1 tbsp Rice Vinegar or Apple Cider Vinegar
  • 1 tsp Cornstarch
  • 1 tbsp Water
  • 1.5 cups Cooked Rice
  • 1 cup Pineapple Chunks
  • 1/2 whole Red Bell Pepper (diced)
  • 1/4 cup Green Onions (chopped)
  • Sesame seeds (for serving)
  • Crushed red pepper (optional)


Instructions

  1. Cut the chicken breast into bite-sized pieces.
  2. Heat the oil in a large skillet over medium heat and sauté the minced garlic for about 30 seconds.
  3. Add the chicken pieces and cook for 5-7 minutes until fully cooked and lightly browned.
  4. Whisk together the soy sauce, pineapple juice, honey or brown sugar, rice vinegar, cornstarch mixed with water, and crushed red pepper in a bowl.
  5. Pour the sauce over the chicken and simmer for about 2-3 minutes until thickened.
  6. Add the pineapple chunks and diced red bell pepper and cook for an additional 2-3 minutes until slightly tender.
  7. Serve the mixture over cooked rice, topped with green onions and sesame seeds.

Notes

Adjust sweetness and spice levels to your liking. Great for using leftover rice.
