Description

A delicious and easy sheet pan dinner featuring juicy Parmesan crusted chicken, roasted baby potatoes, and green beans.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup grated Parmesan cheese
  • 2 cups baby potatoes, halved
  • 2 cups green beans, trimmed
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. On a large sheet pan, toss the halved potatoes with 2 tablespoons of olive oil, Italian seasoning, salt, and pepper.
  3. Roast the potatoes in the oven for 20 minutes.
  4. Meanwhile, mix Parmesan cheese, minced garlic, salt, and pepper in a bowl.
  5. Brush the chicken breasts with remaining olive oil and coat them in the Parmesan mixture.
  6. After 20 minutes, remove the sheet pan and add the chicken breasts and green beans to the pan.
  7. Roast for an additional 20-25 minutes, or until the chicken is cooked through and the vegetables are tender.
  8. Serve warm and enjoy!

Notes

Cut the potatoes in half for even cooking; feel free to use different vegetables. For added flavor, marinate chicken in olive oil and spices beforehand.
