Description
A delicious and easy sheet pan dinner featuring juicy Parmesan crusted chicken, roasted baby potatoes, and green beans.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup grated Parmesan cheese
- 2 cups baby potatoes, halved
- 2 cups green beans, trimmed
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- Salt and pepper to taste
- 1 teaspoon Italian seasoning
Instructions
- Preheat the oven to 400°F (200°C).
- On a large sheet pan, toss the halved potatoes with 2 tablespoons of olive oil, Italian seasoning, salt, and pepper.
- Roast the potatoes in the oven for 20 minutes.
- Meanwhile, mix Parmesan cheese, minced garlic, salt, and pepper in a bowl.
- Brush the chicken breasts with remaining olive oil and coat them in the Parmesan mixture.
- After 20 minutes, remove the sheet pan and add the chicken breasts and green beans to the pan.
- Roast for an additional 20-25 minutes, or until the chicken is cooked through and the vegetables are tender.
- Serve warm and enjoy!
Notes
Cut the potatoes in half for even cooking; feel free to use different vegetables. For added flavor, marinate chicken in olive oil and spices beforehand.
