Description

A cozy, creamy potato soup inspired by Outback Steakhouse, perfect for chilly days.


Ingredients

  • 4 large potatoes, peeled and diced
  • 1 cup sharp cheddar cheese, shredded
  • 4 slices of bacon, cooked and chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Chives or green onions for garnish


Instructions

  1. In a large pot, cook the bacon until crispy. Remove and set aside.
  2. In the same pot, add the diced onion and garlic, and sauté until translucent.
  3. Add the diced potatoes and chicken broth. Bring to a boil, then reduce to a simmer and cook until the potatoes are tender, about 15-20 minutes.
  4. Use a potato masher to lightly mash the potatoes, leaving some chunks for texture.
  5. Stir in the heavy cream, shredded cheddar cheese, and half of the chopped bacon. Season with salt and pepper to taste.
  6. Serve hot, garnished with the remaining bacon and chives or green onions. Enjoy!

Notes

For extra flavor, add a pinch of smoked paprika or diced jalapeños. Use an immersion blender for a smoother texture if desired.
