Description
A cozy, creamy potato soup inspired by Outback Steakhouse, perfect for chilly days.
Ingredients
- 4 large potatoes, peeled and diced
- 1 cup sharp cheddar cheese, shredded
- 4 slices of bacon, cooked and chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- Salt and pepper to taste
- Chives or green onions for garnish
Instructions
- In a large pot, cook the bacon until crispy. Remove and set aside.
- In the same pot, add the diced onion and garlic, and sauté until translucent.
- Add the diced potatoes and chicken broth. Bring to a boil, then reduce to a simmer and cook until the potatoes are tender, about 15-20 minutes.
- Use a potato masher to lightly mash the potatoes, leaving some chunks for texture.
- Stir in the heavy cream, shredded cheddar cheese, and half of the chopped bacon. Season with salt and pepper to taste.
- Serve hot, garnished with the remaining bacon and chives or green onions. Enjoy!
Notes
For extra flavor, add a pinch of smoked paprika or diced jalapeños. Use an immersion blender for a smoother texture if desired.
