Ingredients

  • 1 cup orzo pasta
  • 2 cups broccoli florets
  • 4 cups vegetable broth
  • 1 cup shredded cheddar cheese
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)


Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and garlic, and sauté until softened.
  2. Add the orzo pasta and cook for 2 minutes, stirring frequently.
  3. Pour in the vegetable broth and bring to a boil.
  4. Once boiling, add the broccoli florets, thyme, salt, and pepper.
  5. Reduce the heat to low, cover, and simmer for about 10-12 minutes, or until the orzo is tender and most of the broth is absorbed.
  6. Stir in the shredded cheddar cheese until melted and combined.
  7. Serve hot, garnished with fresh parsley.
