Description

A comforting and delicious dish featuring tender chicken breasts and buttery egg noodles, all cooked in one skillet for easy preparation and cleanup.


Ingredients

  • 4 boneless, skinless chicken breasts (about lb)
  • 8 oz wide egg noodles
  • 2 tbsp unsalted butter
  • 3 cloves garlic, minced
  • ½ cup low-sodium chicken broth
  • 2 tbsp freshly squeezed lemon juice
  • 1 tsp dried thyme
  • ½ tsp red-pepper flakes (optional)
  • Salt and freshly ground black pepper, to taste
  • 2 tbsp chopped fresh parsley


Instructions

  1. Pat the chicken dry and season with salt, pepper, and thyme. Let rest for 10 minutes.
  2. Heat a skillet over medium-high heat, add 1 tbsp butter, and cook chicken for 4-5 minutes per side until golden and cooked through.
  3. Remove chicken and add remaining butter and garlic to skillet, cooking for 30 seconds.
  4. Stir in chicken broth, lemon juice, red-pepper flakes, and simmer for 2-3 minutes.
  5. Add egg noodles and ½ cup hot water, cover, and steam for 8-10 minutes, stirring halfway through.
  6. Preheat oven to 375°F (190°C). Place cooked chicken on top of noodles, cover with sauce, and bake for 12-15 minutes.
  7. Let rest for 5 minutes, slice chicken, and serve with parsley on top.

Notes

For a richer flavor, marinate chicken in lemon juice and thyme before cooking. Consider adding vegetables like spinach or peas for added nutrition.
