Description
A comforting and delicious dish featuring tender chicken breasts and buttery egg noodles, all cooked in one skillet for easy preparation and cleanup.
Ingredients
- 4 boneless, skinless chicken breasts (about 1½ lb)
- 8 oz wide egg noodles
- 2 tbsp unsalted butter
- 3 cloves garlic, minced
- ½ cup low-sodium chicken broth
- 2 tbsp freshly squeezed lemon juice
- 1 tsp dried thyme
- ½ tsp red-pepper flakes (optional)
- Salt and freshly ground black pepper, to taste
- 2 tbsp chopped fresh parsley
Instructions
- Pat the chicken dry and season with salt, pepper, and thyme. Let rest for 10 minutes.
- Heat a skillet over medium-high heat, add 1 tbsp butter, and cook chicken for 4-5 minutes per side until golden and cooked through.
- Remove chicken and add remaining butter and garlic to skillet, cooking for 30 seconds.
- Stir in chicken broth, lemon juice, red-pepper flakes, and simmer for 2-3 minutes.
- Add egg noodles and ½ cup hot water, cover, and steam for 8-10 minutes, stirring halfway through.
- Preheat oven to 375°F (190°C). Place cooked chicken on top of noodles, cover with sauce, and bake for 12-15 minutes.
- Let rest for 5 minutes, slice chicken, and serve with parsley on top.
Notes
For a richer flavor, marinate chicken in lemon juice and thyme before cooking. Consider adding vegetables like spinach or peas for added nutrition.
