Ingredients

4 boneless, skinless chicken breasts

1 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon salt

½ teaspoon black pepper

2 large eggs, lightly beaten

1 cup breadcrumbs (panko or regular)

3 tablespoons unsalted butter

3 tablespoons olive oil

4 tablespoons unsalted butter

3 garlic cloves, minced

½ cup chicken broth

1 tablespoon lemon juice

2 tablespoons heavy cream

1 tablespoon parsley, chopped (for garnish)


Instructions

1. Start by pounding the chicken breasts to achieve an even thickness.

2. In a shallow dish, combine the flour, garlic powder, onion powder, salt, and black pepper.

3. Dip each chicken breast first in the flour mixture, then in the eggs, and finally coat with breadcrumbs.

4. Heat 3 tablespoons of unsalted butter and 3 tablespoons of olive oil in a skillet over medium-high heat.

5. Add the breaded chicken to the skillet, cooking for about 5-7 minutes on each side until golden brown.

6. Remove the chicken and set aside on a plate.

7. In the same skillet, reduce the heat to medium. Add the remaining 4 tablespoons of unsalted butter along with the minced garlic, sautéing for 1 minute until fragrant.

8. Pour in the chicken broth and lemon juice, stirring to combine, and let it simmer for about 2-3 minutes.

9. Add the heavy cream, stirring until the sauce thickens.

10. Return the chicken to the skillet, coating it with the sauce, and heat for an additional minute.
