Ingredients
- 1 pound ground turkey
- ½ cup Italian breadcrumbs or blanched almond flour (for a gluten-free option)
- ¾ cup yellow onion, chopped
- 1 large egg
- 2 teaspoons garlic, minced
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
- Chopped cucumbers
- Kalamata olives
- Tzatziki sauce (store-bought or homemade)
- Fresh dill for garnish
- Lemon wedges or slices
- Cooked rice or pearl couscous as the base
Instructions
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, combine ground turkey, breadcrumbs (or almond flour), chopped onion, minced garlic, egg, salt, and pepper. Mix until well combined.
- Shape the mixture into golf ball-sized meatballs and place on a lined baking sheet.
- Bake the meatballs for approximately 15 minutes. For a crispy finish, broil for an additional 2-3 minutes until golden brown.
- While the meatballs are baking, prepare rice or pearl couscous according to package instructions and chop cucumbers.
- In large serving bowls, create a base with cooked rice or couscous. Top with turkey meatballs, cucumbers, and Kalamata olives.
- Add tzatziki sauce, fresh dill, and lemon wedges. Serve immediately and enjoy!
Notes
For moist meatballs, consider adding olive oil or broth. Experiment with spices for extra flavor.
