Ingredients

  • 1 pound ground turkey
  • ½ cup Italian breadcrumbs or blanched almond flour (for a gluten-free option)
  • ¾ cup yellow onion, chopped
  • 1 large egg
  • 2 teaspoons garlic, minced
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • Chopped cucumbers
  • Kalamata olives
  • Tzatziki sauce (store-bought or homemade)
  • Fresh dill for garnish
  • Lemon wedges or slices
  • Cooked rice or pearl couscous as the base


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine ground turkey, breadcrumbs (or almond flour), chopped onion, minced garlic, egg, salt, and pepper. Mix until well combined.
  3. Shape the mixture into golf ball-sized meatballs and place on a lined baking sheet.
  4. Bake the meatballs for approximately 15 minutes. For a crispy finish, broil for an additional 2-3 minutes until golden brown.
  5. While the meatballs are baking, prepare rice or pearl couscous according to package instructions and chop cucumbers.
  6. In large serving bowls, create a base with cooked rice or couscous. Top with turkey meatballs, cucumbers, and Kalamata olives.
  7. Add tzatziki sauce, fresh dill, and lemon wedges. Serve immediately and enjoy!
