Description

Ingredients

  • 4 large potatoes, peeled and diced
  • 1 onion, diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 cup cooked bacon, crumbled
  • Salt and pepper to taste
  • Green onions, for garnish


Instructions

  1. In a large pot, combine the diced potatoes, onion, and chicken broth. Bring to a boil and simmer until the potatoes are tender, about 15-20 minutes.
  2. Use a potato masher or immersion blender to mash part of the potatoes for a creamy texture, leaving some chunks for heartiness.
  3. Stir in the heavy cream, cheese, and season with salt and pepper.
  4. Cook over low heat until the cheese is melted and the soup is warmed through.
  5. Serve hot, topped with crumbled bacon and green onions.

Notes

For extra flavor, try adding garlic or herbs like thyme or rosemary. If you want a thinner soup, add more chicken broth or cream. Use bacon bits or leftover ham for a different meat option. For a vegetarian version, substitute vegetable broth and omit the bacon.
