Ingredients

- 4 cups chicken broth

Instructions
- In a large pot, combine the diced potatoes, onion, and chicken broth. Bring to a boil and simmer until the potatoes are tender, about 15-20 minutes.
- Use a potato masher or immersion blender to mash part of the potatoes for a creamy texture, leaving some chunks for heartiness.
- Stir in the heavy cream, cheese, and season with salt and pepper.
- Cook over low heat until the cheese is melted and the soup is warmed through.
- Serve hot, topped with crumbled bacon and green onions.
Notes
For extra flavor, try adding garlic or herbs like thyme or rosemary. If you want a thinner soup, add more chicken broth or cream. Use bacon bits or leftover ham for a different meat option. For a vegetarian version, substitute vegetable broth and omit the bacon.
