Ingredients
- Pasta of choice (spaghetti or fettuccine)
- Ricotta cheese
- Lemon zest
- Lemon juice
- Olive oil
- Garlic (minced)
- Salt
- Black pepper
- Fresh parsley (for garnish)
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- In a bowl, combine ricotta cheese, lemon zest, lemon juice, salt, and pepper. Mix until smooth.
- Add the cooked pasta to the skillet and toss with the garlic and olive oil.
- Remove from heat and stir in the ricotta mixture until the pasta is well coated.
- Garnish with fresh parsley and additional lemon zest if desired.
- Serve warm.
