Description

Ingredients

  • Pasta of choice (spaghetti or fettuccine)
  • Ricotta cheese
  • Lemon zest
  • Lemon juice
  • Olive oil
  • Garlic (minced)
  • Salt
  • Black pepper
  • Fresh parsley (for garnish)


Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  3. In a bowl, combine ricotta cheese, lemon zest, lemon juice, salt, and pepper. Mix until smooth.
  4. Add the cooked pasta to the skillet and toss with the garlic and olive oil.
  5. Remove from heat and stir in the ricotta mixture until the pasta is well coated.
  6. Garnish with fresh parsley and additional lemon zest if desired.
  7. Serve warm.
