A vibrant pasta salad combining fresh corn, vegetables, and feta cheese, perfect for summer gatherings.
Ingredients
- 8 ounces pasta (such as penne or rotini)
- 2 cups fresh corn (cooked or grilled)
- 1 red bell pepper, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, diced
- 1/4 cup cilantro, chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tablespoons lime juice
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions. Drain and rinse under cold water to cool.
- Combine the cooked pasta, corn, red bell pepper, cherry tomatoes, red onion, cilantro, and feta cheese in a large bowl.
- Whisk together the olive oil, lime juice, salt, and pepper in a small bowl.
- Pour the dressing over the pasta salad and toss gently to combine.
- Chill in the refrigerator for at least 30 minutes before serving. Enjoy!
Notes
To enhance flavor, grill the corn before adding it. Customize the salad by adding more veggies if desired.
