Description

Crispy on the outside and soft on the inside, Jalapeno Corn Nuggets are a delightful snack or appetizer that combines sweet corn and spicy jalapenos.


Ingredients

  • 1 cup sweet corn
  • 2 jalapenos, chopped
  • 1 cup cheese, grated
  • 1/2 cup flour
  • 1/2 cup cornmeal
  • 1 egg
  • 1/2 cup milk
  • 1 tsp salt
  • 1/2 tsp pepper
  • Oil for frying


Instructions

  1. In a mixing bowl, combine sweet corn, chopped jalapenos, and grated cheese.
  2. In another bowl, whisk together flour, cornmeal, salt, and pepper.
  3. In a separate bowl, beat the egg and mix with milk.
  4. Combine the wet ingredients with the dry ingredients, then fold in the corn mixture.
  5. Heat oil in a frying pan over medium heat.
  6. Drop spoonfuls of the mixture into the hot oil and fry until golden brown.
  7. Remove and drain on paper towels. Serve warm.

Notes

Adjust the amount of jalapenos based on your spice preference. For extra crunch, coat the nuggets in breadcrumbs before frying.
