Crispy on the outside and soft on the inside, Jalapeno Corn Nuggets are a delightful snack or appetizer that combines sweet corn and spicy jalapenos.
Ingredients
- 1 cup sweet corn
- 2 jalapenos, chopped
- 1 cup cheese, grated
- 1/2 cup flour
- 1/2 cup cornmeal
- 1 egg
- 1/2 cup milk
- 1 tsp salt
- 1/2 tsp pepper
- Oil for frying
Instructions
- In a mixing bowl, combine sweet corn, chopped jalapenos, and grated cheese.
- In another bowl, whisk together flour, cornmeal, salt, and pepper.
- In a separate bowl, beat the egg and mix with milk.
- Combine the wet ingredients with the dry ingredients, then fold in the corn mixture.
- Heat oil in a frying pan over medium heat.
- Drop spoonfuls of the mixture into the hot oil and fry until golden brown.
- Remove and drain on paper towels. Serve warm.
Notes
Adjust the amount of jalapenos based on your spice preference. For extra crunch, coat the nuggets in breadcrumbs before frying.
