Ingredients
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 teaspoon salt
- 1 tablespoon baking powder
- 1/2 cup unsalted butter, melted
- 1 cup whole milk
- 2 large eggs, room temperature
- 1 teaspoon vanilla extract
- 1 1/2 cups fresh or frozen cherries, pitted and halved
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line with parchment paper.
- Whisk together flour, sugar, salt, and baking powder in a medium bowl.
- In a separate large bowl, whisk melted butter, milk, eggs, and vanilla extract until smooth.
- Add the dry ingredients to the wet ingredients and stir gently until just combined.
- Fold in the cherries with a spatula, ensuring even distribution.
- Spoon the batter into the prepared loaf pan and smooth the top.
- Bake for 50–60 minutes, or until a toothpick inserted comes out with a few moist crumbs.
- Allow to cool in the pan for 10–15 minutes, then lift out and cool completely on a wire rack.
