Description

High protein egg muffins are a delicious and convenient way to start your day, packed with nutrition and flavor. These savory bites are perfect for breakfast or a wholesome snack any time.


Ingredients

  • 6 large eggs
  • 1 cup spinach, chopped
  • 1/2 cup bell pepper, diced
  • 1/2 cup onion, diced
  • 1/2 cup shredded cheese (optional)
  • Salt and pepper to taste
  • 1/2 cup cooked and crumbled turkey sausage or bacon (optional)


Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. Whisk the eggs in a bowl and season with salt and pepper.
  3. Stir in the chopped spinach, bell pepper, onion, and cheese (if using).
  4. Pour the egg mixture into the muffin tin, filling each cup about 3/4 full.
  5. Sprinkle crumbled turkey sausage or bacon on top if using.
  6. Bake for 18-20 minutes or until the muffins are set and slightly golden.
  7. Allow to cool for a few minutes before removing from the tin.
