Description

A delicious and nutritious quesadilla that combines ranch seasoning with tender chicken and creamy Greek yogurt, perfect for a quick meal.


Ingredients

  • 1 low-carb tortilla
  • 1/2 cup Greek yogurt
  • 1 Laughing Cow cheese wedge
  • 1 cup cooked chicken, shredded
  • 1 tablespoon ranch seasoning
  • 1/2 cup shredded cheese (optional)
  • Cooking spray or a small amount of oil


Instructions

  1. Mix together the Greek yogurt, Laughing Cow cheese, shredded chicken, and ranch seasoning until well combined.
  2. Heat a non-stick skillet over medium heat and lightly coat with cooking spray or oil.
  3. Place the low-carb tortilla in the skillet and spread the chicken mixture over half of the tortilla. If using, sprinkle shredded cheese on top.
  4. Fold the tortilla in half and cook for about 3-4 minutes on each side, or until golden brown and the cheese is melted.
  5. Remove from the skillet, let cool for a minute, then slice and serve.
