A delicious and nutritious quesadilla that combines ranch seasoning with tender chicken and creamy Greek yogurt, perfect for a quick meal.
Ingredients
- 1 low-carb tortilla
- 1/2 cup Greek yogurt
- 1 Laughing Cow cheese wedge
- 1 cup cooked chicken, shredded
- 1 tablespoon ranch seasoning
- 1/2 cup shredded cheese (optional)
- Cooking spray or a small amount of oil
Instructions
- Mix together the Greek yogurt, Laughing Cow cheese, shredded chicken, and ranch seasoning until well combined.
- Heat a non-stick skillet over medium heat and lightly coat with cooking spray or oil.
- Place the low-carb tortilla in the skillet and spread the chicken mixture over half of the tortilla. If using, sprinkle shredded cheese on top.
- Fold the tortilla in half and cook for about 3-4 minutes on each side, or until golden brown and the cheese is melted.
- Remove from the skillet, let cool for a minute, then slice and serve.
Notes
