Description

A smoky, cheesy grilled side dish with tender potatoes, vibrant veggies, and rich melted Velveeta. Perfect for pairing with grilled meats or vegan mains.


Ingredients

4 large baking potatoes
1 green bell pepper, diced
1 cup mushrooms, sliced
1/2 cup onion, diced
1/2 tsp salt
1/2 tsp freshly ground black pepper
1/2 tsp garlic powder
8 oz Velveeta cheese, cut into 1-inch cubes


Instructions

Preheat grill to medium-high heat (375°F / 190°C). Wash and cube potatoes into 1-inch pieces.
Combine potatoes, bell pepper, mushrooms, and onions in a large bowl. Toss with salt, pepper, and garlic powder.
Place seasoned mixture on a large piece of heavy-duty aluminum foil (about 18×18 inches), leaving space around the edges for folding. Add cheese cubes on top.
Fold foil into a sealed packet, ensuring no gaps. Grill with the lid closed for 25-30 minutes, then open the lid and cook 10-15 minutes more until golden and slightly charred.
Carefully open packet and serve hot.

Notes

The foil method keeps cheese from melting too aggressively. For non-dairy, use vegan cheese alternative. For extra richness, add 2 tbsp olive oil to the packet.
