Ingredients
- 4 large whole wheat tortillas or spinach wraps
- 1 cup hummus, store-bought or homemade
- 1 cup crumbled feta cheese
- 1 cup roasted red peppers, sliced
- 1 cup fresh spinach leaves
- ½ cup Kalamata olives, pitted and sliced
- 1 medium cucumber, thinly sliced
- ¼ cup fresh basil leaves (optional)
- Salt and pepper to taste
Instructions
- Lay out your tortillas or wraps on a clean, flat surface.
- Spread a generous layer of hummus on each wrap, covering it completely.
- Sprinkle the crumbled feta cheese evenly over the hummus.
- Layer on the roasted red peppers, spinach leaves, sliced olives, cucumber, and basil (if using).
- Season with salt and pepper to taste.
- Carefully roll each tortilla tightly from one end to the other, ensuring all the fillings stay intact.
- Once rolled, slice each tortilla into pinwheels, approximately 1-inch thick.
- Arrange the pinwheels on a serving platter and enjoy!
