Ingredients

  • 4 large whole wheat tortillas or spinach wraps
  • 1 cup hummus, store-bought or homemade
  • 1 cup crumbled feta cheese
  • 1 cup roasted red peppers, sliced
  • 1 cup fresh spinach leaves
  • ½ cup Kalamata olives, pitted and sliced
  • 1 medium cucumber, thinly sliced
  • ¼ cup fresh basil leaves (optional)
  • Salt and pepper to taste


Instructions

  1. Lay out your tortillas or wraps on a clean, flat surface.
  2. Spread a generous layer of hummus on each wrap, covering it completely.
  3. Sprinkle the crumbled feta cheese evenly over the hummus.
  4. Layer on the roasted red peppers, spinach leaves, sliced olives, cucumber, and basil (if using).
  5. Season with salt and pepper to taste.
  6. Carefully roll each tortilla tightly from one end to the other, ensuring all the fillings stay intact.
  7. Once rolled, slice each tortilla into pinwheels, approximately 1-inch thick.
  8. Arrange the pinwheels on a serving platter and enjoy!
