Ingredients
- 1 pound large shrimp, peeled and deveined
- 1 cup unsweetened coconut flakes
- 1 cup panko breadcrumbs
- 1/2 cup all-purpose flour
- 2 large eggs
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- Sweet dipping sauce (e.g., sweet chili sauce or honey mustard) for serving
Instructions
- Preheat your oven to 400°F (200°C).
- In a shallow bowl, mix the flour, salt, pepper, garlic powder, and paprika.
- In another bowl, whisk the eggs until well combined.
- In a third bowl, combine the coconut flakes and panko breadcrumbs, mixing them evenly.
- Dredge each shrimp first in the flour mixture, dip into the eggs, and finally coat with the coconut-panko mixture.
- Place the coated shrimp on a baking sheet lined with parchment paper.
- Bake for 12-15 minutes, or until the shrimp are golden brown and crispy.
- Serve with your choice of sweet dipping sauce.
