Description

A healthier alternative to fried shrimp, these crispy baked coconut shrimp combine the sweetness of coconut with crunchy panko breadcrumbs. Perfect for parties or a tropical treat at home.

Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 cup unsweetened coconut flakes
  • 1 cup panko breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Sweet dipping sauce (e.g., sweet chili sauce or honey mustard) for serving

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a shallow bowl, mix the flour, salt, pepper, garlic powder, and paprika.
  3. In another bowl, whisk the eggs until well combined.
  4. In a third bowl, combine the coconut flakes and panko breadcrumbs, mixing them evenly.
  5. Dredge each shrimp first in the flour mixture, dip into the eggs, and finally coat with the coconut-panko mixture.
  6. Place the coated shrimp on a baking sheet lined with parchment paper.
  7. Bake for 12-15 minutes, or until the shrimp are golden brown and crispy.
  8. Serve with your choice of sweet dipping sauce.

Notes

For the best results, serve immediately after baking to maintain crispiness.
