Description

A delightful dish combining juicy chicken thighs with a rich creamy garlic and mushroom sauce, perfect for family dinners or special occasions.


Ingredients

  • 4 bone-in, skin-on chicken thighs
  • Salt and pepper, to taste
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 8 oz fresh cremini or button mushrooms, diced
  • 3 garlic cloves, minced
  • 1/2 cup chicken broth
  • 3/4 cup heavy cream
  • 2 tablespoons fresh parsley or thyme, chopped (plus extra for garnish)
  • Additional salt and pepper, to taste


Instructions

  1. Pat the chicken thighs dry with paper towels and season with salt and pepper.
  2. In a large skillet, heat the butter and olive oil over medium-high heat. Sear the chicken thighs skin-side down for 5-7 minutes until crispy and golden. Flip and cook for 2-3 minutes on the other side, then remove and set aside.
  3. Add the diced mushrooms and minced garlic to the skillet and sauté for 4-5 minutes.
  4. Pour in the chicken broth, scraping up browned bits, and reduce slightly. Stir in the heavy cream and simmer until thickened.
  5. Nestle the chicken back into the sauce, reduce heat to low, cover, and cook for 10-12 minutes.
  6. Garnish with fresh herbs before serving.

Ensure chicken is dry before cooking for crispy skin. Adjust seasoning to taste and let chicken rest before serving.
