This Creamy Cheddar Ranch Pasta Salad bursts with savory, tangy, and cheesy flavors. Using turkey or plant-based ‘bacon’ and sharp cheddar cheese, it combines a rich ranch dressing with al dente pasta for a satisfying dish perfect for picnics, potlucks, or weeknight meals.
Ingredients
1 lb pasta
1 lb turkey or plant-based ‘bacon’, crisp
1 cup sour cream
1 cup liquid ranch dressing
6 oz sharp cheddar cheese, grated
1/2 cup green onions, chopped
Salt, to taste (for pasta water)
Instructions
Cook 1 lb pasta in well-salted boiling water until al dente, 8-12 minutes. Drain thoroughly and cool.
Preheat oven to 400°F (200°C). Spread turkey or plant-based ‘bacon’ on a baking sheet. Bake 25 minutes or until crisp.
In a large bowl, combine cooled pasta, cooked ‘bacon’, grated cheddar, green onions, sour cream, and ranch dressing. Mix well to coat.
Chill 1-2 hours for flavors to meld. Sprinkle with additional cheddar (optional) before serving.
Notes
Use turkey or plant-based ‘bacon’ for halal/non-pork option. Freshly grated cheddar melts better than pre-shredded. Store in airtight container (unopened ranch dressing) for up to 3 days. Serve chilled or at room temperature.
