Description

A comforting soup featuring rich Italian sausage, hearty potatoes, and fresh greens, perfect for chilly evenings.


Ingredients

  • 1 lb Italian sausage (mild or hot), casings removed
  • 1 tbsp olive oil (if needed)
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups potatoes, peeled and cubed
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups fresh spinach or kale, chopped
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • 1/2 tsp crushed red pepper flakes (optional)
  • Salt and black pepper, to taste
  • Optional: grated Parmesan cheese for serving


Instructions

  1. In a large pot over medium heat, cook the Italian sausage until browned and fully cooked, breaking it into chunks. If necessary, remove any excess grease.
  2. Add the diced onion to the pot and cook until softened, about 3 to 4 minutes.
  3. Stir in the minced garlic and cook for an additional 30 seconds until fragrant.
  4. Add the cubed potatoes, chicken broth, oregano, basil, red pepper flakes (if using), and season with salt and pepper.
  5. Bring the mixture to a boil, then reduce the heat and let simmer for 15 to 20 minutes, or until the potatoes are fork-tender.
  6. Stir in the heavy cream and the chopped spinach or kale. Simmer for another 5 minutes until the greens are wilted.
  7. Taste the soup and adjust the seasoning as needed.
  8. Serve hot, garnished with grated Parmesan cheese if desired.

Notes

For extra depth, mash a few potato cubes in the pot before adding the cream for a thicker consistency.
