Description

A flavorful and satisfying salad that combines creamy, tangy, and spicy elements, perfect as an accompaniment to grilled meats.


Ingredients

  • 1 (16-ounce) package shredded coleslaw mix
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 1/2 cups frozen corn, thawed and drained
  • 1 cup red bell pepper, finely chopped
  • 1/2 cup fresh cilantro, finely chopped
  • 1/4 cup jalapeño chile, seeded and finely chopped
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/4 cup fresh lime juice
  • 3 tablespoons canned adobo sauce
  • 1 tablespoon taco seasoning mix
  • 2 teaspoons kosher salt
  • 1 teaspoon ground cumin
  • 1/4 cup scallions, thinly sliced, for garnish
  • Lime wedges, for serving (optional)


Instructions

  1. Combine Salad Ingredients: In a large mixing bowl, combine all salad ingredients and toss gently until thoroughly mixed. Set aside.
  2. Prepare the Dressing: In a separate bowl, whisk together mayonnaise, sour cream, lime juice, adobo sauce, taco seasoning, salt, and cumin until smooth.
  3. Combine and Chill: Pour the dressing over the coleslaw mixture, toss to coat, garnish with scallions, and serve with lime wedges.

Notes

For best flavor, let the coleslaw chill for at least 30 minutes before serving. Adjust seasoning to taste.
