Ingredients

  • 2 cups cooked chicken breast, shredded
  • 1 ripe mango, thinly sliced
  • 1 cup shredded carrots
  • 1 cucumber, julienned
  • 2 tablespoons fresh cilantro, chopped
  • 810 rice paper wrappers
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 teaspoon honey
  • 1 teaspoon sesame oil


Instructions

  1. Prepare all fillings: Shred cooked chicken, slice mango, and julienne cucumber and carrots.
  2. Make the dressing: Whisk together soy sauce, lime juice, honey, and sesame oil.
  3. Soften the rice paper: Dip one wrapper in warm water for a few seconds.
  4. Assemble the bundles: Place the softened wrapper on a clean surface and add fillings in the center.
  5. Drizzle with dressing: Drizzle some dressing over the fillings before folding.
  6. Fold and roll: Fold in the sides and roll tightly from the bottom up.
  7. Repeat: Continue with remaining ingredients.
  8. Serve: Enjoy fresh with extra dipping sauce on the side.
