Ingredients
- 2 cups cooked chicken breast, shredded
- 1 ripe mango, thinly sliced
- 1 cup shredded carrots
- 1 cucumber, julienned
- 2 tablespoons fresh cilantro, chopped
- 8–10 rice paper wrappers
- 2 tablespoons soy sauce
- 1 tablespoon lime juice
- 1 teaspoon honey
- 1 teaspoon sesame oil
Instructions
- Prepare all fillings: Shred cooked chicken, slice mango, and julienne cucumber and carrots.
- Make the dressing: Whisk together soy sauce, lime juice, honey, and sesame oil.
- Soften the rice paper: Dip one wrapper in warm water for a few seconds.
- Assemble the bundles: Place the softened wrapper on a clean surface and add fillings in the center.
- Drizzle with dressing: Drizzle some dressing over the fillings before folding.
- Fold and roll: Fold in the sides and roll tightly from the bottom up.
- Repeat: Continue with remaining ingredients.
- Serve: Enjoy fresh with extra dipping sauce on the side.
