Ingredients
- 1 cup all-purpose flour
- 1/2 cup sugar
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1/2 cup milk
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup fresh cherries, pitted and halved
- 1 tablespoon sugar for topping
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, combine the melted butter, milk, egg, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the cherries gently.
- Divide the batter evenly among the muffin cups. Sprinkle the tops with sugar.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Let cool for a few minutes before transferring to a wire rack. Enjoy!
Notes
Use fresh cherries for the best flavor. Do not overmix the batter for light and fluffy muffins.
