Ingredients
- 2 cups broccoli florets
- 8 oz pasta (e.g., rotini or penne)
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, diced
- 1/2 cup shredded carrots
- 1/2 cup mozzarella cheese, cubed
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Cook the pasta according to the package instructions. Drain and set aside to cool.
- Combine the broccoli, cherry tomatoes, red onion, shredded carrots, and mozzarella cheese in a large bowl.
- Whisk together olive oil, lemon juice, garlic powder, salt, and pepper in a small bowl.
