Description

Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 1 cup mushrooms, sliced
  • 1 can cream of mushroom soup
  • 1 cup beef broth
  • 2 cups frozen mixed vegetables
  • 1 cup shredded cheese
  • Salt and pepper to taste
  • 1 cup mashed potatoes (prepared)


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef over medium heat. Drain excess fat.
  3. Add the chopped onion and sliced mushrooms to the skillet, cooking until softened.
  4. Stir in the cream of mushroom soup and beef broth. Season with salt and pepper.
  5. In a baking dish, layer the ground beef mixture, followed by frozen mixed vegetables. Top with prepared mashed potatoes and sprinkle with shredded cheese.
  6. Bake for 30-35 minutes, or until the cheese is bubbly and golden.
  7. Let cool slightly before serving.

Notes

For added flavor, try sautéing garlic with the onions and mushrooms. You can substitute ground turkey for a healthier option.
