Ingredients
- 1 lb ground beef
- 1 onion, chopped
- 1 cup mushrooms, sliced
- 1 can cream of mushroom soup
- 1 cup beef broth
- 2 cups frozen mixed vegetables
- 1 cup shredded cheese
- Salt and pepper to taste
- 1 cup mashed potatoes (prepared)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, brown the ground beef over medium heat. Drain excess fat.
- Add the chopped onion and sliced mushrooms to the skillet, cooking until softened.
- Stir in the cream of mushroom soup and beef broth. Season with salt and pepper.
- In a baking dish, layer the ground beef mixture, followed by frozen mixed vegetables. Top with prepared mashed potatoes and sprinkle with shredded cheese.
- Bake for 30-35 minutes, or until the cheese is bubbly and golden.
- Let cool slightly before serving.
Notes
For added flavor, try sautéing garlic with the onions and mushrooms. You can substitute ground turkey for a healthier option.
