Ingredients
- 1 can of beans (e.g., chickpeas or cannellini beans)
- 1 jar of Castelvetrano olives, pitted and halved
- 1 can of artichoke hearts, drained and quartered
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 2 teaspoons za’atar seasoning
- Salt and pepper to taste
- Fresh herbs (optional, for garnish)
Instructions
- In a large bowl, combine the beans, olives, and artichokes.
- In a separate bowl, whisk together olive oil, lemon juice, minced garlic, za’atar, salt, and pepper to create the marinade.
- Pour the marinade over the bean mixture and toss gently to coat.
- Let the salad sit for at least 20 minutes to allow flavors to meld.
- Serve chilled or at room temperature, garnished with fresh herbs if desired.
