Ingredients
- 2 cups wild mushrooms, sliced
- 1 large onion, thinly sliced
- 2 cups kale, chopped
- 4 cups vegetable broth
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- In a large pot over medium heat, pour in the olive oil and let it heat up.
- Add the thinly sliced onions and caramelize them for about 10 minutes, stirring occasionally until they turn golden brown.
- Stir in the minced garlic and sliced wild mushrooms. Cook for an additional 5 minutes until the mushrooms are tender and have released their moisture.
- Add the chopped kale and thyme to the pot. Mix well before pouring in the vegetable broth.
- Bring the mixture to a boil, then reduce the heat to low and let it simmer for 15-20 minutes.
- Season with salt and pepper to taste before serving.
Notes
Choose a mix of wild mushrooms for a more complex flavor. For a creamier soup, stir in a splash of coconut milk or heavy cream. Let the soup cool before storing in airtight containers.
