Ingredients

  • 2 cups wild mushrooms, sliced
  • 1 large onion, thinly sliced
  • 2 cups kale, chopped
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • Salt and pepper to taste


Instructions

  1. In a large pot over medium heat, pour in the olive oil and let it heat up.
  2. Add the thinly sliced onions and caramelize them for about 10 minutes, stirring occasionally until they turn golden brown.
  3. Stir in the minced garlic and sliced wild mushrooms. Cook for an additional 5 minutes until the mushrooms are tender and have released their moisture.
  4. Add the chopped kale and thyme to the pot. Mix well before pouring in the vegetable broth.
  5. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 15-20 minutes.
  6. Season with salt and pepper to taste before serving.
