Delightful cookies featuring a rich balance of white chocolate and peppermint, perfect for the holiday season.
Ingredients
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 2 large eggs
- 2 teaspoons vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon peppermint extract
- 1 cup white chocolate chips
- 1 cup peppermint chips
- Crushed candy canes for topping
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the softened butter, granulated sugar, and brown sugar until smooth.
- Beat in the eggs one at a time, then stir in the vanilla and peppermint extracts.
- In another bowl, whisk together the flour, baking soda, and salt. Gradually add this to the wet ingredients, stirring until just combined.
- Fold in the white chocolate chips and peppermint chips.
- Drop tablespoonfuls of dough onto ungreased baking sheets, spacing them about 2 inches apart.
- Bake for 8-10 minutes, or until the edges are lightly golden.
- Remove from oven and immediately sprinkle with crushed candy canes.
- Allow to cool on the baking sheets for a few minutes before transferring to wire racks to cool completely.
Notes
For stronger peppermint flavor, add more extract in small increments. Drizzle melted white chocolate over cooled cookies for an extra touch.
