Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 cup eggnog
- 1 cup dried cranberries
- 1 cup white chocolate chips
- 1/2 cup powdered sugar (for glaze)
- 2 tablespoons milk (for glaze)
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a bowl, mix the flour, baking powder, baking soda, salt, cinnamon, and nutmeg until thoroughly combined.
- In another bowl, cream together the softened butter and granulated sugar until light and fluffy. Add eggs one at a time, mixing well after each addition.
- Gradually alternate adding the dry mixture and eggnog to the butter mixture, stirring until just combined.
- Gently fold in dried cranberries and white chocolate chips until evenly distributed.
- Pour batter into the prepared loaf pan, spreading evenly.
- Bake for about 60 minutes or until a toothpick inserted in the center comes out clean.
- For the glaze, mix powdered sugar with milk until smooth and drizzle over the cooled bread.
Notes
Ensure butter and eggs are at room temperature for easier mixing. Don’t overmix the batter to keep bread tender.
