Ingredients
- 1 lb cooked chicken, shredded
- 1 can (15 oz) white beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 cup chicken broth
- 1 cup diced tomatoes with green chilies
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp chili powder
- Salt and pepper to taste
- 1/2 cup cream or Greek yogurt
- Chopped cilantro for garnish
Instructions
- In a large pot, sauté onion and garlic until translucent.
- Add shredded chicken, white beans, corn, diced tomatoes, chicken broth, cumin, chili powder, salt, and pepper.
- Bring to a simmer and cook for about 15 minutes, stirring occasionally.
- Stir in cream or Greek yogurt until fully combined.
- Adjust seasonings as needed.
- Serve hot, garnished with chopped cilantro.
Notes
You can use rotisserie chicken for quicker preparation. Adjust spices according to heat preference. For a thicker chili, let it simmer longer or puree a small portion and mix it back in.
