Ingredients

  • 4 cups mixed salad greens
  • 1 cup shredded carrots
  • 1 cup cucumber, julienned
  • 1/2 cup red bell pepper, thinly sliced
  • 1/2 cup cooked shrimp or tofu, diced
  • 1/4 cup fresh mint, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup roasted peanuts, chopped
  • 3 tablespoons lime juice
  • 2 tablespoons fish sauce or soy sauce (for vegetarian)
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or sugar
  • 1 clove garlic, minced
  • 1 small chili, minced (optional)


Instructions

  1. In a large bowl, combine the salad greens, shredded carrots, julienned cucumber, thinly sliced red bell pepper, and cooked shrimp or tofu.
  2. Add the chopped mint and cilantro to the bowl.
  3. In a small bowl, whisk together the dressing ingredients: lime juice, fish sauce (or soy sauce), rice vinegar, honey, minced garlic, and optional chili.
  4. Pour the dressing over the salad mixture and toss gently to coat everything evenly.
  5. Finish by sprinkling the roasted peanuts on top and serve immediately.

Notes

Prepare the ingredients ahead of time, but combine them just before serving to keep them fresh. Adjust spice levels to your preference, and serve chilled for the best flavor.
