Ingredients
- 1 cup cooked quinoa
- 1 can chickpeas, drained and rinsed
- 1 avocado, sliced
- 1 cup shredded purple cabbage
- 1 cup microgreens
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Lemon juice (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Toss the chickpeas with olive oil, smoked paprika, salt, and pepper, then spread them on a baking sheet.
- Roast the chickpeas for 20-25 minutes until crispy.
- In a bowl, layer the cooked quinoa, roasted chickpeas, avocado slices, shredded purple cabbage, and microgreens.
- Drizzle with lemon juice if desired and serve.
