Description

A festive and moist Vegan Christmas Cake made with a blend of dried fruits and spices, perfect for holiday celebrations.


Ingredients

  • 1 cup mixed dried fruit (raisins, currants, cranberries)
  • 1 cup unsweetened applesauce
  • 1 cup almond milk
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ginger
  • 1/4 teaspoon salt
  • 1/2 cup chopped nuts (walnuts or almonds)
  • 1/2 cup chopped candied ginger
  • 1/4 cup maple syrup


Instructions

  1. Preheat oven to 350°F (175°C) and grease a cake pan.
  2. In a bowl, mix the dried fruits, applesauce, almond milk, brown sugar, and vegetable oil.
  3. In another bowl, combine the flour, baking powder, baking soda, spices, and salt.
  4. Gradually add the dry ingredients to the wet mixture and stir until well combined.
  5. Fold in the chopped nuts and candied ginger.
  6. Pour the batter into the greased pan and smooth the top.
  7. Bake for 30-40 minutes or until a toothpick comes out clean.
  8. Allow to cool before serving.

Notes

For a richer flavor, replace some almond milk with coconut milk. Customize the dried fruits to your preference.
