Ingredients
- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, browned
- 1/4 cup granulated sugar
- 2 pounds cream cheese, softened
- 1 1/4 cups granulated sugar
- 1/2 cup sour cream
- 1/2 cup heavy cream
- 4 large eggs
- 2 teaspoons vanilla bean paste
- 1 teaspoon pure vanilla extract
- 1/2 cup sour cream
- 2 tablespoons powdered sugar
- 1/2 teaspoon vanilla extract
Instructions
- Prepare the Crust: Preheat your oven to 350°F (175°C). In a bowl, mix graham cracker crumbs with browned unsalted butter and granulated sugar until well-coated. Press firmly into the bottom of a springform pan. Bake for about 10 minutes, then let it cool.
- Make the Filling: In a large bowl, combine softened cream cheese with granulated sugar. Beat until smooth. Add sour cream, heavy cream, eggs, vanilla bean paste, and vanilla extract. Mix until fully blended.
- Bake the Cheesecake: Pour the cream cheese filling over the cooled crust. Bake for about 60-70 minutes, until the center is set and slightly jiggles. Turn off the oven and let cool with the door slightly open for about 1 hour.
- Chill and Add Topping: Once cooled, refrigerate for at least 4 hours or overnight. Before serving, mix sour cream, powdered sugar, and vanilla extract for a topping. Spread over the chilled cheesecake.
