A creamy and cheesy dip that combines melted cheeses with ground pork sausage, beans, and veggies, perfect for gatherings and game days.
Ingredients
- 1 pound of ground pork sausage
- 32 ounces of Velveeta cheese, diced
- 8 ounces shredded taco cheese blend
- 8 ounces cream cheese, cubed
- 2 cans (10 ounces each) of Rotel
- 1 can (15 ounces) of drained corn
- 1 can (15 ounces) of black beans, rinsed and drained
- 1/2 cup finely chopped red onion
- Juice from 1 lime
- 2 tablespoons freshly chopped cilantro
- Tortilla or corn chips for serving
Instructions
- In a skillet over medium-high heat, brown the ground pork sausage. As it cooks, add the red onion, a pinch of salt, pepper, and cumin. Stir until the onion softens and becomes fragrant.
- Lower the heat to medium. Add the cream cheese, Velveeta, and taco cheese blend to the skillet. Stir until everything is melted and smooth.
- Gradually pour in milk to achieve your desired consistency. Then, add in the black beans, corn, Rotel tomatoes, and any additional ingredients you prefer, like jalapeños for some extra kick.
- Reduce the heat and let the queso simmer. Stir occasionally until it becomes creamy and aromatic.
- Finish off with a squeeze of lime juice and the freshly chopped cilantro. Serve warm with tortilla or corn chips for dipping.
Notes
Use fresh ingredients for the best flavor. Keep a close watch on the heat to avoid the cheese becoming grainy.
