Description

A creamy and cheesy dip that combines melted cheeses with ground pork sausage, beans, and veggies, perfect for gatherings and game days.


Ingredients

  • 1 pound of ground pork sausage
  • 32 ounces of Velveeta cheese, diced
  • 8 ounces shredded taco cheese blend
  • 8 ounces cream cheese, cubed
  • 2 cans (10 ounces each) of Rotel
  • 1 can (15 ounces) of drained corn
  • 1 can (15 ounces) of black beans, rinsed and drained
  • 1/2 cup finely chopped red onion
  • Juice from 1 lime
  • 2 tablespoons freshly chopped cilantro
  • Tortilla or corn chips for serving


Instructions

  1. In a skillet over medium-high heat, brown the ground pork sausage. As it cooks, add the red onion, a pinch of salt, pepper, and cumin. Stir until the onion softens and becomes fragrant.
  2. Lower the heat to medium. Add the cream cheese, Velveeta, and taco cheese blend to the skillet. Stir until everything is melted and smooth.
  3. Gradually pour in milk to achieve your desired consistency. Then, add in the black beans, corn, Rotel tomatoes, and any additional ingredients you prefer, like jalapeños for some extra kick.
  4. Reduce the heat and let the queso simmer. Stir occasionally until it becomes creamy and aromatic.
  5. Finish off with a squeeze of lime juice and the freshly chopped cilantro. Serve warm with tortilla or corn chips for dipping.
