Description

A simple yet delicious recipe for crispy oven-baked BBQ chicken with just two main ingredients.


Ingredients

  • 8-10 chicken thighs and/or drumsticks (bone-in, skin-on)
  • 2 cups of your favorite BBQ sauce
  • 2 tablespoons extra-virgin olive oil (or canola oil)


Instructions

  1. Preheat the oven to 400 degrees F.
  2. Coat the chicken on all sides with olive oil, then season with salt and pepper.
  3. Place the chicken skin side down on a rimmed baking sheet. Bake for 25 minutes.
  4. Remove the chicken from the oven and increase the temperature to 425 degrees F.
  5. Using a basting brush, coat the top of the chicken with barbecue sauce. Carefully flip the chicken using a spatula.
  6. Baste the other side of the chicken with the barbecue sauce and return it to the oven for an additional 7 minutes.
  7. After 7 minutes, remove from the oven, baste the top again with BBQ sauce, and return to the oven for another 7 minutes.
  8. Repeat the basting process two more times, for a total of three basting sessions, and place the chicken back in the oven for 7 more minutes each time.
  9. If the chicken isn’t crisp enough, move the oven rack up and broil for about 3-5 minutes until golden and crispy.
  10. Let the chicken sit for about 5 minutes after cooking before serving.

Notes

For best results, use high-quality BBQ sauce and allow time for basting layers to set.
