A delicious and easy meal combining ground turkey, fresh tomatoes, and herbs over jasmine rice, packed with protein and nutrients.
Ingredients
- 1 pound ground turkey
- 1 cup jasmine rice
- 2 cups chicken broth
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- Salt and pepper to taste
- 1/4 cup fresh parsley, chopped
- 1/4 cup grated Parmesan cheese (optional)
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add chopped onion and garlic, cooking until softened.
- Add ground turkey and cook until browned.
- Stir in diced tomatoes, oregano, paprika, salt, and pepper.
- Add jasmine rice and chicken broth.
- Bring to a boil, then reduce heat and cover, simmering for about 20 minutes or until rice is cooked.
- Remove from heat and stir in fresh parsley and Parmesan cheese if using.
- Serve hot.
Notes
For added flavor, garnish with parsley or Parmesan. Leftovers can be stored in an airtight container for up to 3 days.
