Description

A delicious and easy meal combining ground turkey, fresh tomatoes, and herbs over jasmine rice, packed with protein and nutrients.


Ingredients

  • 1 pound ground turkey
  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup grated Parmesan cheese (optional)


Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add chopped onion and garlic, cooking until softened.
  3. Add ground turkey and cook until browned.
  4. Stir in diced tomatoes, oregano, paprika, salt, and pepper.
  5. Add jasmine rice and chicken broth.
  6. Bring to a boil, then reduce heat and cover, simmering for about 20 minutes or until rice is cooked.
  7. Remove from heat and stir in fresh parsley and Parmesan cheese if using.
  8. Serve hot.

Notes

For added flavor, garnish with parsley or Parmesan. Leftovers can be stored in an airtight container for up to 3 days.
