Description
A warm and hearty stew made with ground turkey, pumpkin, and wholesome vegetables, perfect for cooler days.
Ingredients
- 1 lb ground turkey
- 1 cup pumpkin puree
- 1 onion, chopped
- 2 cloves garlic, minced
- 3 cups chicken broth
- 2 carrots, sliced
- 1 tsp thyme
- 1 tsp sage
- Salt and pepper to taste
- Olive oil
Instructions
- In a large pot, heat olive oil over medium heat.
- Add onion and garlic, sauté until softened.
- Add ground turkey, cook until browned.
- Stir in carrots and pumpkin puree, cooking for an additional 2 minutes.
- Pour in chicken broth, add thyme and sage, and bring to a simmer.
- Season with salt and pepper.
- Let the stew simmer for 20-30 minutes until the vegetables are tender.
- Serve warm.
Notes
For extra flavor, add a splash of apple cider or a pinch of nutmeg. You can also substitute with ground chicken or beef and use butternut squash for a variation.
