Description

A warm and hearty stew made with ground turkey, pumpkin, and wholesome vegetables, perfect for cooler days.


Ingredients

  • 1 lb ground turkey
  • 1 cup pumpkin puree
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 cups chicken broth
  • 2 carrots, sliced
  • 1 tsp thyme
  • 1 tsp sage
  • Salt and pepper to taste
  • Olive oil


Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onion and garlic, sauté until softened.
  3. Add ground turkey, cook until browned.
  4. Stir in carrots and pumpkin puree, cooking for an additional 2 minutes.
  5. Pour in chicken broth, add thyme and sage, and bring to a simmer.
  6. Season with salt and pepper.
  7. Let the stew simmer for 20-30 minutes until the vegetables are tender.
  8. Serve warm.

Notes

For extra flavor, add a splash of apple cider or a pinch of nutmeg. You can also substitute with ground chicken or beef and use butternut squash for a variation.
