A delightful dish combining tender rice noodles with fresh vegetables and a creamy peanut dressing, perfect for lunch, dinner, or as a side dish.
Ingredients
- 8 oz rice noodles
- 1 cup shredded carrots
- 1 red bell pepper, thinly sliced
- 1 cup shredded purple cabbage
- 2 green onions, sliced
- 1/4 cup chopped peanuts
- 1/4 cup creamy peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon lime juice
- 1 tablespoon honey or maple syrup
- 1 teaspoon fresh ginger, grated
- 1 teaspoon sesame oil
- 1–2 tablespoons warm water (to thin sauce)
Instructions
- Cook rice noodles according to package directions, then drain and rinse with cold water.
- Prepare all vegetables and place them in a large mixing bowl.
- In a small bowl, whisk together peanut butter, soy sauce, lime juice, honey, ginger, sesame oil, and water until smooth.
- Add cooled noodles to the vegetables and pour the peanut dressing over the top.
- Toss gently until everything is evenly coated.
- Chill briefly or serve immediately, topped with chopped peanuts.
Notes
For added protein, consider incorporating grilled chicken, shrimp, or tofu. Adjust spice levels to taste with red pepper flakes or Sriracha.
