Description

A delightful blend of tender chicken, fresh veggies, and a savory peanut sauce, perfect for lunch or dinner.

Ingredients

  • Tender chicken (grilled or sautéed)
  • Fresh veggies (such as lettuce, carrots, and bell peppers)
  • 1/4 cup peanut butter
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons brown sugar or honey
  • 2 tablespoons rice wine vinegar

Instructions

  1. In a bowl, mix the peanut butter, soy sauce, brown sugar or honey, and rice wine vinegar to create the Thai peanut sauce.
  2. Cook the tender chicken and slice it into thin strips.
  3. Prepare your fresh veggies of choice, such as lettuce leaves, shredded carrots, and sliced bell peppers.
  4. Spread a generous amount of the peanut sauce on the wraps.
  5. Add the sliced chicken and a handful of veggies.
  6. Roll the wraps tightly, ensuring that all the filling stays inside.
  7. Serve immediately on a platter, accompanied by extra peanut sauce on the side for dipping.

Notes

Store leftovers in an airtight container in the refrigerator for 2-3 days, ideally keeping sauce separate to prevent sogginess.
