Ingredients
- 1 cup cooked rice
- 2 cups cooked chicken, shredded
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 red bell pepper, diced
- 1 avocado, diced
- 1/4 cup diced red onion
- 1/4 cup cilantro, chopped
- 1 lime, juiced
- 1 teaspoon chili powder
- Salt and pepper to taste
- Crumbled feta cheese (optional)
- Sour cream or Greek yogurt (optional)
Instructions
- In a large bowl, combine the cooked rice, shredded chicken, corn, bell pepper, avocado, red onion, and cilantro.
- Squeeze the lime juice over the mixture and sprinkle with chili powder, salt, and pepper.
