  • 2 cups cooked chicken, shredded
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 red bell pepper, diced
  • 1 avocado, diced
  • 1/4 cup diced red onion
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Crumbled feta cheese (optional)
  • Sour cream or Greek yogurt (optional)


Instructions

  1. In a large bowl, combine the cooked rice, shredded chicken, corn, bell pepper, avocado, red onion, and cilantro.
